Why not spend your too-cold weekend cooking? I’m going to. And then why not cook classic Italian and Italian-American dishes, such as you can find in Tasting Italy?  I think you should, and here are 5 great ones!

Tasting Italy’s Gnocchi with Fontina Sauce!
Everyone loves macaroni and cheese, but if you really want the cheesy starchy height of cuisine, you need to have homemade gnocchi with fontina sauce. I mean really, people. Pour a nice glass of wine, and cuddle in for the day.

Classic Mozzarella Grandma Pie
I am currently having a thing for ‘Grandma Pies’, that is, pizzas squished into sheet pans and cooked in a standard oven, not pizzas made pizza-parlor style with fancy equipment. You should be having a thing for them too, they’re easy to do, and super thrilling.

Cacio e Pepe; Roman Spaghetti with Black Pepper and Cheese
Hyacinth, that new restaurant in St. Paul, has a cacio e pepe for the ages, so creamy, so lush, it’s the kind of pasta you want to eat every day. And you can if you learn to make it at home! It’s really not hard, just some spaghetti, some cheese, some pepper—I don’t even know how it all comes together to be so stunning, but it does.

The Pioneer Woman’s Italian Pot Roast
Sometimes you want to mix up your pot-roast routine, so you throw a couple of jars of roast red peppers and some sun dried tomatoes into the pot, as the Pioneer Woman does. This is an extremely flexible recipe, the artichokes are definitely optional.

Milk-Braised Pork Shoulder
Milk braised pork is a classic in both France and Italy, and while some people don’t like the way the sauce looks, it looks curdled sometimes, it just tastes so good I think you should power through.
