In honor of Robin Asbell on the show this week, I thought I’d pull together some meatless recipes for meat-lovers, because if you want to eat meatless I feel like you should have the same savory big flavors meat-eaters want. Because they’re satisfying! Or maybe this is like a top bicycles for car-drivers, what can I say, I tried! 

Robin’s Jackfruit Tacos
A couple of cans of jackfruit from a specialty market, some barbecue sauce, you’re well on your way to jackfruit tacos.  I had no idea these were so easy. Thanks Robin! 

Garlic Butter Mushrooms
Do this: Get some big portobellos. Cook them up in garlic butter. Serve them on a toasted brioche bun, with fancy cheese. That’s a good cheeseburger! Mushrooms are my favorite burger-substitute, way, way better than the fake-meat burgers. 

Baked Eggs with Artichokes and Parmesan
What’s as good as beefy onion soup, but good for vegetarians?  A runny egg cooked on a garlic-touched artichoke parmesan base, it’s like artichoke dip for dinner, which I endorse.

Lentil Indian “Meatballs”
Why not get some lentils to stick together, like a meatball?  That’s a traditional Indian dish, and I approve it. You could also just go to Ikea and get a couple bags of their veggie-balls. They’re chick-pea based, and really not bad. 

Artichoke Walnut Tofu Sliders
Robin Asbell one more time! I like artichokes and walnuts together, and I’d put them on little sweet rolls, like Hawaiian rolls, with aioli. Robin makes her own buns, which I think is too too much work. Good for you Robin, but we are not all Robin!
