Are we sick of nesting and comfort foods yet? Are we suddenly craving veggies, and things that lived in sunlight?  I know I am. So I put together a grab-bag of the very best super-hearty dinner salads. Make one and feel vital! I insist.

Farmer’s Salad
Pickled vegetables and hard boiled eggs.  Yes, this is the fancy beer drinker’s salad, and yes I think those people exist.

Arctic Char Gravlax with Apple Pecan Salad
This is a ton of work, but really delightful—arctic char makes such delicate gravlax, and then the apple and pecan salad just makes the dish.

Spiced Lentil, Pumpkin and Goat Cheese Salad
A really hearty winter vegetable salad is a rarity—I love this one. Get the best goat cheese you can afford! I like Donnay Dairy, in Wisconsin.

Salmon Nicoise
Most people make everyday Salade Nicoise with tuna, especially fancy jarred oil-packed tuna, but I’ve been feeling salmon more lately. Coastal Seafoods is carrying the first Marine Stewardship Council farmed one now, which is something the world needs.

Greek Salad with Grilled Chicken
I sometimes think that the world’s healthiest recipe is a Greek Salad: You get good fats in the olives, fermented goodness in the cheese and olives, and vegetable goodness in all the rest of it.  Chicken makes it a bit more substantial. You can really add anything though. Chick peas, flank steak, lamb kabobs—Greek salad is a miracle.
